Ingredients

Walnut Banana Cake

  • 240 g all-purpose flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • 80 g light brown sugar
  • 80 g granulated sugar
  • 4 medium-sized very ripe bananas , mashed
  • 2 large eggs , room temperature
  • 6 tbsp unsalted butter , room temperature
  • 2/3 cup (160ml) buttermilk , room temperature
  • 2 tsp vanilla extract
  • 120 g baking walnuts

Cream Cheese Frosting

  • 8 oz. full-fat cream cheese , room temperature
  • 1/2 cup (113g) unsalted butter , room temperature
  • 160 g powdered sugar, sifted , adjust to personal preference
  • 1 tsp vanilla extract
  • tsp salt
  • 1 tbsp whole milk

Instructions

Walnut Banana Cake

  • Preheat the oven to 350°F. Line an 8" x 8" square baking pan with parchment paper. Next, whisk together all-purpose flour, baking soda, and salt in a mixing bowl. Set both aside.
  • In the bowl of a stand mixer fitted with the paddle attachment, cream unsalted butter, light brown and granulated sugar for about 3 minutes at medium speed. Remember to scrape down the sides and bottom of the bowl to ensure thorough mixing. Next, add the eggs and vanilla extract. Beat until combined. Incorporate mashed bananas. Lower the mixer speed to low, add flour in 2 additions, alternating between the flour and buttermilk, starting and ending with the flour. Add walnuts. Briefly fold to combine. Stop once there are no more large streaks of flour.
  • Pour the batter into the prepared baking pan. Bake for about 40-50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Note that baking times may vary depending on your oven, so it's always a good idea to check the cake a few minutes before the suggested time. Allow the cake to cool completely. In the meantime, make the cream cheese frosting. 

Cream Cheese Frosting —

  • In a mixing bowl, add room temperature cream cheese and unsalted butter. Beat at medium speed until smooth and creamy, about 1-2 minutes. Add powdered sugar, vanilla extract, salt, and whole milk. Continue to beat the frosting until it's creamy with no lumps. Transfer frosting to a piping bag with the piping tip of your choice. 

Cake Assembly —

  • Once the banana cake has completely cooled, pipe on the cream cheese frosting with any design you'd like. Slice and serve.
